This recipe is incredible. It heals sicknesses and broken hearts- I’ve seen it.
This chicken soup is so simple and delicious that your entire family will eat it AND you will be out of the kitchen super quick. I mean, you just throw all of the ingredients ina pot like this one then let it simmer for 40 minutes.
I love this recipe so much it’s all I make for my friends and family when they need a meal after they’ve had a baby or when everyone has fallen ill. When my friends 1 year old had a terrifying Febrile Seizure in the middle of the night, you better believe I brought some to her the next day (you can read more about that here).
Another option with this Chicken Soup Recipe is to cook 2-3 batches at once and then freeze it. You can take it out and defrost it for up to four months on those nights you just don’t want to cook. I strongly believe in the power of your kids helping you cook. Yes, it takes more time and energy, but in the long run the payoff will be better. I want my kids to have the skills to cook meals like this chicken soup recipe in the future so they can feed themselves and their families well. To have your kids help with the preparation (such as chopping carrots), you want to make sure that you have the safest tools to avoid any injury. We received this kids cooking kit off of amazon and we love them. The tools are the perfect size for their hands and the knives can’t break skin. It saves me a lot of stress!
Chicken Soup Recipe
Ingredients ⁃ chicken thighs 1 pound (I prefer bone in, but you can get it removed if you’d like) ⁃ 6-8 red potatoes, quartered ⁃ 2-3 Carrots cut in 1 inch sections ( I like to leave the skin on, but that is your choice) ⁃ 1 cup diced celery ⁃ 8 teaspoons Knorr Chicken Flavor Bouillon ⁃ 8 cups of water Directions 1. Add chicken water to soup stockpot. Make sure the chicken is covered. 2. Add remaining ingredients and bring to a boil. 3. Let simmer for 40 minutes, or until chicken is ready. I like to serve with a side of quinoa or rice to help you be fuller longer, just prepare separately then add once it’s time to serve!
