Okay mamas- here it is! My easy, amazing vegan chili recipe that I am constantly getting requests for. It’s delicious, hearty, and so simple that it’s perfect for your family or to gift a friend in need after she’s had a baby or just plain needs support. I will often make this with HOMEMADE BEANS (which you can see how I make here), but canned is fine too. Just be aware of the added salt to canned beans and they aren’t soaked so they can upset your stomach a lot more. I will also double or even triple this chili recipe in my favorite stockpot and then freeze it in glass Tupperware so that I have enough as backup for the week. In a pinch I have also made vegan chili in my crock pot as I am running out of the door for the day. I love this easy recipe. It is so hearty and delicious- it fills my entire family (yes- it’s kid friendly!). If you pair it with some corn chips then you definitely won’t be able to keep your kids away from this meal. Which is great, considering how it’s packed with essential nutrients like fiber and protein. Here's how you make it, Mama. Vegan Chili Recipe 16 oz black beans (canned or homemade) 16 oz pinto beans 16 oz lentils 16 oz canned diced tomatoes (the whole thing- don’t rinse it) 1 lb bag of frozen veggies (whatever you prefer!) 1 package taco seasoning Vegan cheese (optional) Corn chips (optional) Directions Add everything to a pot except the vegan cheese and corn chips Bring to a boil Let simmer 30 minutes Serve in a bowl topped with cheese with chips on the side!
